Ramazan Sofrası




TOPALAK ÇORBASI


Ramazan ayında iftar sofrasının vazgeçilmezi çorbalardır. Doyurucu özelliğiyle bilinen topalak çorbasını da mönünüze katın.
4 kişilik
- 100 gr bulgur
- 50 gr kuzu döş kıyma
- 1 adet yumurta
- 1 adet kuru soğan
- 10 gr un
- 3 gr tuz
- 3 gr akbiber
- 3 gr pul biber
- 2 diş sarımsak
- 4 adet domates
- çay bardağı sirke
- 1 tatlı kaşığı biber salçası
- 3 yemek kaşığı tereyağı
- 5 gr tuz
- 5 gr karabiber
- 5 gr kimyon
- Yarım adet limon
- 4 yemek kaşığı yoğurt
Bulgur, kıyma, yumurta, ince doğranmış kuru soğan, un, tuz, akbiber, pul biber ve sarımsak ile bir harç hazırlayın. Hazırladığınız harcı minik minik toplar haline getirin. Ayrı bir tencerede tereyağını eritin. Salça ve domatesleri soteleyin. Üzerine sıcak su ilave edin ve sirke, tuz, karabiber ve kimyonu ekleyerek kaynatın. Hazırladığınız topları içerisine atın ve pişmesini bekleyin. Çorbamız hazır. (Arzu ederseniz çorbayı servis ederken sarımsaklı yoğurt ilave edebilirsiniz).

Traveling and working in the country of Turkey can bring on an appetite of infused inspirations.
The sights of Ottoman history and sounds of clinking of tea glasses and smells of savory lamb lingering through the streets.


As one settles down to lunch or dinner, you cannot help but be inspired.
Today in the Anatolian region of Turkey, Md.Ameenuddin Obaid has ordered the Adana Kebab or Kofte.
To remember his moment of inspiration, he photographs his dinner of kebabs.
To look at the photo is like sitting across from him, and enjoying this delicious meal of centuries ago.
An infusion of hot spices and sweet tasty lamb, that inspires the soul.

Authentic origin of the Adana Kebab is from eastern Anatolia.
Spicey ground lamb that is grilled with big vegetables like tomatoes, peppers, and onions.
Its been said that in the times of Marco Polo on the Silk Road route, that Asiatic spices was most popular with the Venetians. 
Eastern Anatolia enjoyed more spicey foods.
 May be where they got their interest in hotter spices during this medival time. 
The port nearby Ayas was the place where trades of spices and wares occured.  


The region has been inhabited since prehistoric times, and some of the remnants of the Hittite, Phrygian, and Greek periods are still visible. 
The town was settled by Oghuz tribes in the eleventh century, and later it came under Byzantine rule. 
In the 16th century, Sanjak Turks came into the area, and eventually it became a part of the Ottoman Empire.
